Welcome back to Yule Blog! Today I spent 4-5 hours baking cookies and watching the snow outside while listening to Christmas music. My top favorite holiday albums right now are Christmas & Chill, You Make it Feel Like Christmas, A Very Decent Christmas, Joy: A Holiday Collection, Merry Christmas by Mariah Carey, and some old school Manheim Steamroller.
Every year I look forward to make a giant batch of my Momma "Tina's Perfect Cut-out Cookies" because they taste the best and are the easiest to cut out shapes and decorate. I also love her recipe for powdered sugar frosting with almond extract. Each year I get a few different kinds of sprinkles and this year I tried some cute Wilton's candy toppers. The shapes I got were Christmas bulb lights, trees and gifts, candy canes, and snowflakes. I also always add my favorite rainbow sprinkles and red hots.
Here's the recipe for both the cookies and the icing!
1 Cup of butter
1/2 cup shortening
2 cups sugar
4 eggs
3 tsps. vanilla
5 cups flour
2 tsps. baking powder
3/4 tsps. salt
Preheat oven to 325. If desired, soften batter and shortening in microwave. Add sugar, eggs, and vanilla to butter and shortening. and mix well. Add baking powder and salt. Then add flour one cup at a time. Roll out on well floured surface (about 1/4 of batch at a time). Cut out cookies and bake on ungreased sheet until golden around the edges. Decorate when cooled.
Icing: about 3 caps of almond extract to about 4-5 cups powdered sugar. Add enough water to create desired consistency. (Less water=firmer icing that dries faster.) Enjoy!
